    Cleaning Thai fish

Recently, I was upcountry and came across the ladies cleaning fish for their 2007 feast.

It was hot outside, I will admit!

    Cleanliness is the key here.

This lady wasted no time in wacking the fish over the head.

    Just about done.

These ladies were cutting the smaller fish.

I am pretty certain they don't eat this part. I think!

Go ahead and try the local cuisine, you might be surprised!

No I think they mash it and add some spices and make a paste out of it.

I have never seen my pard smash it, he mix it with a lot of garlic, ground chilis and a bunch of stuff, puts it into a 4 or 6 inch hunk of bamboo and cooks the shit awhile in that bamboo.
But he ain't really civilized tho, bastard will eat anything, and most of it smells terrible and looks like dog puke in a bucket, he eat little frogs the size of your thumb, Pretty little black furry gophers or something, Smack em in the back of the head with the back edge of a knife and throw the things in boiling water and slips some of the hide off, Then chops em up.
He is single and runs a small shop in the village fixin bike tires and welding and making stuff. I go over and hang out during the day, but damn sure don't eat there and never stand to close down wind after he has eaten either.
But I have never seen him clean a fish, he chops em up guts, feathers and all.
